1 lb. Hot Sausage with
Fennel
(Or any other kind of Meat
Sausage
Hot or Sweet) Sliced on a
Diagonal
2 Cloves Garlic Chopped
Well
1/2 Sweet Onion Quartered
Lengthwise
Then Sliced
lengthwise
4 Tbls. Tomato
Paste
1/4 cup Olive
Oil
3/4 cup Parmesan
Cheese
6 oz. Red Wine
28 oz. Can of Whole Tomatoes
Drained then Crushed by hand
1 cup Chicken Stock
1/4 cup Red Wine Vinegar
1Tbls. Dried Parsley
1lb. Bow Tie Pasta Cooked
Aldente
1 loaf of Crusty Italian Bread
Salt and Pepper to taste
In a deep 12" frying pan over med. heat the Oil and
saute the sausage for about 7 to 8 minutes. Add the
onions,saute till onions start to yellow.
Now put in the Red Wine and deglaze for 2
minutes,now add the rest of your ingredients except
the Pasta and simmer for 10 to 12 minutes.
Put the pasta in a large enough bowl pour the Sauce
over and mix it well with the Pasta . Sprinkle about
a 1/4 cup of Parmesan over it and serve with some
crusty bread remaining Parmesan for sprinkling.
