The Marinade
4 (6 to 8 oz.) Tuna Steaks. Marinated For
an hour in the following.
1Tbls. olive oil 1/2cup Brut Champagne.
2oz.Tin of Flat Anchovies Fillets in Olive
Oil, chopped plus their oil.
2Tbls Lemon Juice.
The Sauce
1Tbls. Olive Oil plus 2Tbls.unsalted Butter.
2 Large cloves Garlic and 1/2 Onion chopped.
1cup(canned) Diced Tomatoes.
1/2cup Dry Red Wine.1/2cup Chicken Stock
8 Basil Leaves torn lengthwise.
2Tbls. small Capers.
[ 1Tbls.dried Parsley ]
In a large frying pan over Med. heat the butter and
oil for the sauce. Sauté the onion and garlic till
golden. Add the remaining sauce ingredients. Then
bring to a simmer, lower heat and simmer for 15
minutes stirring occasionally.
In another large frying pan over Med. High, when
hot, place in the Tuna Steaks and The Marinate put a
lid on top. Cook for about 6 mins. on each side. Add
The Sauce and [Parsley].
Bring to a boil and serve with your favorite pasta
and Peasant Bread
