Spinach Quiche
(6 servings)
 

 

 

  
1/2 pound Swiss cheese -- shredded
1 package creamed spinach -- thawed
1 small can evaporated milk
1 pinch nutmeg
1 pie crust
2 egg -- whipped
3 bacon slices -- cooked
1 onion -- diced & sautéed

Cook bacon until crisp.
Sautee onions in bacon fat.
Crumble bacon and onions to pie shell.
Mix eggs, evaporated milk, cheese and spinach in bowl and add to pie shell.
Bake at 450° for 15 minutes lower oven to 350° and bake an additional 15-20
minutes
