- 2 lbs skirt steak, trimmed, cut into 5 portions

- 2 tbls. olive oil |
|
- 1 tbls. oregano |
|
- 3 clove garlic |
|
- 12 jumbo pitted black olives
slice widthwise about 1/8"
each

|
- 1 35 oz. can whole plum tomatoes with basil sliced
by hand and left pulpy |
|
- 3 ozs. red wine |
|
- 3 pinch hot red pepper |
|
- 1 lb. spaghetti |
|
- 2 tbs. salt for spaghetti |
|
- salt & pepper to taste for steak pizziola
|
|
- Put 4 quarts water to boil for spaghetti.
|
|
- In separate fry pan just large enough for all the
steak, heat oil on high and sear steak 3 mins. on
each side. Lower heat to low, add garlic and cook
till garlic gets soft about 2 mins. |

- Now add wine and continue till wine is rendered to
about1/2 the amount. |
|
- Add the rest of the ingredients and cook till the
water has boiled for the spaghetti and cook aldente.
|
|
- Pour some sauce over spaghetti and serve steak
with spaghetti on the side. |
